Simple Naturally Enriched Bread

Ingredients:
3 3/4 cups unbleached all-purpose flour
1/4 cups cricket powder
2 teaspoons kosher salt
2 teaspoons sugar
2 1/4 teaspoons instant yeast
2 tablespoons fresh chopped rosemary
2 teaspoons dried italian herbs
2 cups lukewarm water
1/4 cup neutral oil
Softened unsalted butter, for greasing
Directions:
In a bowl, combine the flour, cricket powder, salt, sugar, instant yeast and herbs, followed by the water and oil.
Using a rubber spatula, mix until the ingredients form a sticky dough ball. Let it sit until bubbly.Cover the bowl with a tea towel and set aside in a warm spot to rise for 1 to 1 1/2 hours, until the dough has doubled in size.
Preheat oven at 425F.
Grease two oven-safe bowls with the softened butter. Using two forks deflate the dough by releasing it from the sides of the bowl and pulling in toward the center. Turning the dough into a rough ball.
Using the two forks and working from the center out, separate the dough into two equal pieces. Transfer each half to the oven-safe bowls.
Let the dough rise on the countertop (do not cover) for 10-20min, until the top of the dough just crowns the rims of the bowls.
Transfer the oven-safe bowls to the oven and bake for 15 minutes. Reduce the heat to 375F and bake for 17-20min more, until golden all around. Remove them from the oven and turn the loaves out onto cooling racks.
